Sue’s Taco Soup

1 pint pressure canned ground beef, drained
1 medium onion, chopped
1 package mild taco seasoning mix (or 2 tablespoons homemade taco seasoning)
1 can (16 ounce) corn
1 pint pressure canned kidney beans, drained
1 can (28 ounce) stewed tomatoes
1 can (8 ounce) tomato sauce
tortilla chips
grated cheese

Sauté chopped onion; add to ground beef. Stir in taco seasoning, corn, kidney beans, stewed tomatoes, and tomato sauce. Simmer for 20 to 30 minutes. Serve topped with tortilla chips and grated cheese.
Makes 8 servings.

Taco Seasoning Mix
3/4 cup chili powder
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon crushed red pepper flakes
1 tablespoon dried oregano
2 tablespoons paprika
1/3 cup ground cumin
3/4 cup sea salt
3/4 cup black pepper

Mix all together in an airtight container.
To season use 2 Tablespoons of mix per pound of meat.
